Operation Manager (Multi Unit)

About the role

The Operation Manager (Multi-Unit) is responsible for leading and optimizing the operational performance of Smoke restaurants, ensuring consistency in service, food & beverage quality, guest experience, property maintenance, and brand standard across multiple locations. This role oversees the daily operations of Smoke Canggu and the upcoming Smoke Padonan, working closely with each Restaurant Manager, Executive Chef, and Bar Manager to maintain smooth operations, financial efficiency, and strong team performance.

• Key responsibilities
• Lead the daily operational performance of Smoke restaurants
• Conduct regular site visits to monitor service quality, food & beverage consistency, cleanliness, workflow, and staff behaviors
• Provide operational direction and support to each Restaurant Manager to solve issues quickly
• Ensure all outlets follow SOP, health & safety standards, hygiene regulations, and service protocols
• Mentor, coach, and guide each Restaurant Manager to enhance their leadership and operational capabilities
• Ensure all outlets deliver a consistent Smoke brand experience in service style, food & beverage presentation, atmosphere, and teamwork
• Monitor guest feedback across Google and social media reviews and direct in-house comments
• Monitor daily, weekly, monthly sales performance of each outlet
• Review COGS, F&B cost, labor cost, and inventory accuracy with Restaurant Manager & Head Department
• Ensure compliance with local regulations, hygiene laws, safety standards, and licensing requirements
• About you
• Multi-unit operational leadership experience
• Ability to mentor and develop Restaurant Managers
• Strong understanding of SOP compliance and health & safety standards
• Experience in financial performance monitoring and cost control
• Capability to lead operational audits and prepare consolidated reports
• Experience with pre-opening operations and new outlet launches
• Knowledge of compliance, safety standards, and risk management
