- Restaurant Manager
- CLAY Bali — Ubud
CLAY Bali is a new premium restaurant and lounge opening in Ubud. Our concept is inspired by the Silk Road, fire, earth, warm hospitality, tea, and long evenings around the table.
- We are looking for an experienced, hands-on, and highly organized
- Restaurant Manager
- to lead daily restaurant operations, manage the FOH team, and ensure a consistently high level of guest experience and service.
- Main Responsibilities
- Manage daily restaurant operations and ensure smooth service during all shifts.
- Lead, supervise, and motivate the FOH team.
- Organize staff schedules, shifts, sections, and daily responsibilities.
- Conduct daily briefings before service.
- Control staff attendance, punctuality, grooming, and discipline.
- Train the team according to CLAY service standards and SOPs.
- Monitor service quality throughout the guest journey.
- Ensure the restaurant is fully prepared before opening each service.
- Control table setup, cleanliness, atmosphere, music, lighting, and overall guest-facing presentation.
- Handle guest complaints and special requests professionally.
- Manage VIP guests, special occasions, and important reservations.
- Coordinate reservations, seating plans, and table turnover.
- Work closely with the kitchen, bar, hookah, and reception teams.
- Coordinate operational issues with the General Manager.
- Monitor restaurant equipment and report maintenance issues.
- Ensure opening and closing procedures are completed correctly.
- Control daily checklists and operational standards.
- Support inventory control for FOH operating supplies.
- Participate in hiring, onboarding, training, and performance evaluation of FOH employees.
- Identify operational problems and implement practical solutions.
- Prepare regular reports on operations, team performance, guest feedback, and key issues.
- Key Requirements
- Previous experience as a
- Restaurant Manager, Assistant Restaurant Manager, or senior FOH leader
- Strong preference for candidates with experience in premium restaurants, hotels, beach clubs, or high-volume hospitality venues.
- Strong understanding of restaurant operations and service standards.
- Proven experience managing and developing FOH teams.
- Strong leadership and communication skills.
- Confident handling of guest complaints and difficult situations.
- Good understanding of reservations, POS systems, cash procedures, and restaurant reporting.
- Ability to organize schedules and manage labor efficiently.
- Strong attention to detail and discipline.
- Ability to work under pressure during busy service periods.
- Good spoken and written English.
- Fluent Bahasa Indonesia.
- Confident use of Excel or Google Sheets is an advantage.
- Responsible, proactive, organized, and solution-oriented.
- Based in Bali or ready to work from Ubud.

- Reporting Line
- The Restaurant Manager will report directly to the
- General Manager
and work closely with
- Brand Chef and kitchen team;
- Bar Team;
- Hookah Team;
- Finance;
- Purchasing;
- Operations and Facility;
- Reception / Guest Relations;
- Storekeeper.
- Main Result of the Position
The restaurant must operate every day with
- consistently high service standards;
- a professional and well-organized FOH team;
- smooth coordination between departments;
- strong staff discipline and accountability;
- fast and professional resolution of guest issues;
- excellent guest experience from arrival to departure;
- full compliance with CLAY operational standards and SOPs.
